Death Knight Stat Breakdown:
Here is what I was able to find out for aproximate value of what each point is worth for DPS, I recomend getting to your hit cap of 262 and even pushing high enough to reach spell hit cap 17%(not as critical as the melee cap but still can help with DPS generated from death coil etc), beyond that +to hit is of no value. The same is true with exp, get to 6.5% but any more points spent on exp beyond 6.5 is points that does not benifit you. As you can see Strenth is the main stat you will want to gear for. Haste and armor piercing are worth very little to us at this point but that may change in the future. For some reason they love to give us gear with haste on it, grrrr...
